Squirrel Soufle?

I casually mentioned that I had, in the past, eaten squirrel -- no, I don't really know why I tell people such things -- to my sister in law a couple of years ago. She was shocked, as it appears that the beilka is considered something of a Ukrainian national fuzzy, cute, NON-EDIBLE animal.

HA! Looks like there's good reason to eat them, if your British and you choose the right ones:

Lately, a new meat is gracing the British table: Squirrel is selling as fast as gamekeepers and hunters can bring it in.

Note: Squirrel can be rather gamey, at least when rolled in flour and fried, which was the way it was prepared when I had it.
